The New Orleans Cafe is a family owned Creole cooking restaurant. Creole cooking is largely based on the Roux and on the Trinity. A Roux traditionally uses a base of lard and flour - we use "lighter" vegetable oil these days. The Trinity is a tasty combination of onions, celery, and green peppers. Our food does not have the spice profile made famous by the Cajuns, but if you need it, we have placed a bottle of Hot Sauce on each table! Please keep in mind that our food has absolutely no fat or calories if you get it nowhere near your mouth.
Our family comes from a long line of New Orleans chefs who have cooked their way through generations of enthusiastic eaters. Our recipes have been passed down from fathers to sons, mothers to daughters, grand-maw-maws to nieces, and from cousins to cousins.
